Filet Mignon Steak


  • Filet mignon 200 g

  • Cooking oil 2tbsp

  • Garlic Clove 1 pcs

  • Fresh rose marry sprigs 2 pcs

  • Butter 2 tbsp

  • Salt to taste

  • Black Pepper Powder to taste


Step 1 Rest at room temperature

Before making steak, make sure your filet mignon rest at room temperature. Firstly, grab it straight from the freezer and let it rest at room temperature for 30 minutes before cooking it.

Step 2 Season the Steak

After 3o minutes of resting, season the filet mignon with a generous amount of salt and black pepper powder. Season top, bottom, and sides of steak thoroughly to get an even flavor.

Step 3 Sear the steak

Then take a pan and heat it for 5 minutes over high flame. Then pour two tablespoons of cooking oil into it. Once the oil starts to shimmer and smoke comes out from it place your steak in it. Then let it sit for 3 minutes without moving it from the place. When the crust at the bottom is formed, flip the steak and sear it from another side for 3 more minutes without moving.

Step 4 Baste the steak

For basting the steak, add two tablespoons of butter, one clove of garlic, and two sprigs of fresh rosemary into the pan. Then tilt the pan so that butter gathers at one side of the pan. Now using a spoon collect melted butter and pour it over the steak using a spoon. Keep basting for 3 minutes.

Step 5 Bake the steak

Now remove the pan from the stove and place it in the 230˚C preheated oven. Then bake for 7 minutes for a medium-rare steak. Cooking filet mignon in the oven will equally turn steak tender.

Step 6 Slice the Steak

Once the steak is baked, take out the steak and let it rest for 10 minutes. Then slice it into pieces for serving. If you skip the resting part then it will turn dry. Moreover, resting keeps it tender and juicy.

Step 7 Serve filet mignon

Once the steak is ready, you can serve it with sauteed veggies, mashed potatoes, pesto sauce, or even with cream of mushroom sauce.

  • Don't put a cold steak in the pan, otherwise, you will not get a perfect crust.
  • Pat dry with a paper towel before seasoning the steak to remove excess moisture.
  • Always use cast iron or stainless steel pan for cooking filet mignon.
  • You can use a grill pan for grilling steak mignon.
  • You can use canola, sunflower, grapeseed, or even olive oil for searing the steak.
  • For rare steak, bake it for 6 minutes.
  • For medium steak, bake it for 8 minutes.
  • If you like medium-well steak then bake for 9 minutes.
  • For a well-cooked steak, bake it for 10 minutes.
