Surely you will want a recipe that is quick to make, can be stored in the freezer, and even can pair up with anything for easy meal prep.  Gnocchi is an Italian potato dumplings recipe in which boiled potatoes and flour are mixed to prepare a dough and then rolled into a cute shape.  You can find gnocchi easily in freezers in Italian supermarkets, However, if you are unable to find them in your area you can make them at home.

  • Potatoes 4 large
  • Egg  1 large beaten
  • All-purpose flour 1 cup

Directions for Making Gnocchi

Boil Potatoes

Firstly, take four large potatoes and wash them thoroughly to remove dust. Then in a pot pour water and let it boil over high heat once the water gets boiled add potatoes into it. Boil the potatoes until they turn soft. After boiling the potatoes, take them out of the pot and rinse them under tap water to cool down.

Peel, Dice & Mash Potatoes

Then peel off the skin of the potatoes and dice them into small pieces. Then using a grater or masher mash them thoroughly for gnocchi.

Add Cheese & Egg

Then add one beaten egg and ricotta cheese into the mashed potatoes. Combine them together using your hands or a spatula.

Then add flour, salt and pepper into the potatoes and again combine them thoroughly to make a gnocchi dough.

Knead the Dough

Then knead down the potatoes and flour mixture to make a soft dough. Once the dough is ready, divide it into four equal pieces.

Roll & Slice the Dough

Then roll each piece into a long strip using your hands. Then using a knife cut the strip into equal size small bites.

Finally, roll over each bite over a fork to give it a cute shape. The gnocchi is ready to store or cook.

Freeze the Gnocchi

After shaping the gnocchi, freeze them for 15 minutes so they get hard. If you want to store gnocchi then put it in a ziplock bag and store them in freezer for later use.

If you want to cook it then there are two ways to prepare it

  • Either you can boil them in water for a minute and then take them out.
  • Or you can simply shallow fry them in oil for 2 minutes.

When it comes to serving there are multiple ways to serve gnocchi that are :

  • You can combine boiled gnocchi with pesto sauce and serve it as a side dish.
  • Cook boiled gnocchi marinara sauce on low flame for 5 minutes along with your preferred spices and enjoy it as gnocchi pasta.
  • Serve shallow fry gnocchi along with sour cream.
