- Take fresh peeled tamarind of 100 grams.
- Select a clean bowel of suitable size.
- Boil the water.
- Prepare the electric grinder or use Custom grinding tools used in home kitchen like mortar and pestle.
- Take 100 grams of jaggery.
- Place measured salt, black salt, red chili powder and chat masala quantity wise separately.
- Arrange plastic sandwich bag for packing.
How to make imli toffee step by step
Now you are ready for actual process of making imli toffee which involve cooking, grinding etc.
Soaking of Tamarind
Put 100 grams of tamarind in a Bowl. Pour 1 cup of boiled water into bowl and mix them well with spoon for up to 5 minutes. Soak this mixture for twenty minutes so that seeds can be separated.
Remove Imli seed
Now remove all the seeds and other extra material(roots etc.) from the mixture of imli and water one by one By separation method. Must wash your hands before starting separation of seeds.
Put the seedless mixture of tamarind into grinder and grind it for 5 minutes or use custom tools e.g. mortar and pestle for grinding. If you are using custom tools for grinding imli mixture, make sure mixture is grinded well.
For giving imli Toffee Mild sweetness touch, add 5 Endocarp rinse dates in to well grinded mixture of imli and water. Grind the mixture again until it become smooth in texture.
Strain The Mixture
Bring out the Tamarind and dates Pulp from grinder and put it in to the strainer. Stir it well in a bowl and you will get smooth and refined tamarind paste.
Add Jaggery and Ghee
Now add 100 grams jaggery and one table spoon of ghee in mixture and cook it for five to ten minutes on medium flame. Keep whisking until jaggery dissolved in mixture completely. Be careful if the flame is high or whisking is not proper, then mixture can turn to bitter in taste due to burning.
Add one table spoon of chat masala, half table spoon of red chilies, half table spoon of black salt and half table spoon of cumin in paste and keep cooking on low flame. add some salt as per taste. keep whisking until paste become thick.
Let it Cool Down
Switch the burner off and take of the pot from stove. Put the cooked Paste in refrigerator for 5 to 10 minutes.
Coat tamarind candy in Plastic Bag
By using spoon, squeeze the dates and tamarind paste and wrap it in 3 inch by 3 inch sandwich bags and close plastic bag with a twist tie. Make as many as you can and put them in refrigerator again for almost half an hour. your imli candy is ready for tasting.
