Ingredients
For Shortbread Dough
- All-purpose flour 2cups
- Salted butter 1cup
- Powdered sugar 1/4cup
- Egg 1beated
- Salt 1pinch
- Vanilla Extract 1tsp
For Egg Tart Filling
- Eggs 4large
- Warm water 3/4cup
- Sugar 6tbsp
- Salt 1pinch
- Evaporated milk 3/4cup
- Vanilla extract 1tsp
Directions
Preparing Dough
1. Mix Butter and Flour
In a wide bowl add two cups of all-purpose flour, then add one stick of salted butter into the flour. Mix them together with your clean hands. It will be better if you use gloves, it’s not only a matter of hygiene but it will also save the dough from sticking together. Let the chilled butter set at room temperature before using it

2. Add Egg, Salt, Sugar, and Vanilla Extract to Flour
After mixing the butter and flour, in a bowl beat, one large egg then pour this beaten egg liquid into the flour, mix well using a whisk or hands. Then add a pinch of salt and powdered sugar into the mixture. Then pour 1teaspoon of vanilla extract into the dough mixture, you can skip it as vanilla is an optional ingredient. Finally, using hands or a mixer, mix the flour to form a soft dough.

3. Knead the Dough
Take out the dough on a clean and flat surface, and knead the dough with your hands, you have to knead the dough until it becomes soft and smooth. Don’t over knead the dough otherwise it may get hard. Then roll the dough in your hands to make a ball-like shape from the dough.

4. Wrap and Chill the Dough
After that make a softball dough, then place it in a bowl and cover the bowl with a cling wrap. Then place the bowl in the refrigerator for chilling the dough. Then after 10 minutes take out the dough from the refrigerator and remove the cling wrapper from the bowl.

5. Roll the Dough
On a flat clean surface, sprinkle some flour then put the dough over the dusted surface of the flour. Take a rolling pin and roll the dough with it. your dough should be well spread, make sure all sides of the dough are equally rolled and the thickness must be 1inches in size.

6. Apply Butter to Dough
Butter will make your dough more crispy and tasty, so take a butter knife and spread the butter on the dough with it. Make sure to cover every inch of the dough in butter. Then wrap the dough from all four sides to make a pocket, roll it again and then cut it into small round pieces using a cookie cutter.

7. Prepare Tart Pan
Grease the tart pan with butter, you can also use oil instead of butter for greasing the pan then it’s time to place the cut dough pieces in the pan. Take a cut piece of dough and place it over the pan then slightly push it into a pan with your fingers. One by one place all pieces in the pan.

Prepare Egg Tart Filling
8. Whisk Eggs
Whisk four large eggs in a bowl, along with a pinch of salt. Keep whisking until the mixture gets a velvety smooth consistency. Then add vanilla essence to enhance the aroma of the tart filling.

9. Pour Milk, Warm water and Sugar in Beated Eggs
Pour evaporated milk into the beaten egg mixture, and stir the mixture using a spoon or whisk. once the filling is prepared pour warm water and sugar into the prepared tart filling. Now strain this filling through a strainer to make sure there are no lumps remaining. Then chill it in the refrigerator for 5 minutes.

10.Pour Filling in Tart Pan
Now pour the chilled filling in the tart pan over the dough. Fill all shortbread crusts in a tart pan with egg mixture. Don’t fill the shortbread tart up to the top, at least 1 inch of shortbread crust should be uncovered.

11. Bake Egg Tart in Oven
Now bake the egg tarts in a 200C preheated oven for 20 minutes. Bake until you notice a brownish surface on the top of the eggs tarts, Once the bake time is completed, take the pan out and check the tart with a toothpick. If the toothpick comes out dry then your tarts are fully done but if the toothpick is wet then you have to bake them for 5 more minutes in the oven.
