Korean steamed eggs or Ttukbaegi-Gyeranjjim is a traditional side dish in Korean cuisine. Velvety and silkier texture steamed eggs recipe that is cook along with the stock. The final dish comes in a volcanic shape that resembles egg souffle or you can say them jiggly eggs. As it is prepared in an earthenware pot (Ttukbaegi) hence, known as Ttukbaegi Gyeranjjim. However, the Gyeranjjim refers to steamed eggs.  Korean restaurants widely serve it along the main course. The savory egg custard dish can be enjoyed for breakfast, lunch, or in dinner. It is mainly served as a side dish along with rice.

  • Eggs 6 large
  • Chicken stock 1 cup
  • Green onions 1 tbsp
  • Salt half teaspoon

Directions for Making Korean Steamed Eggs

Crack Eggs in a Pot

Firstly, take six large eggs and crack them one by one in an earthenware pot.

Chop Green Onions

Then finely chop green onions for steamed eggs using a sharp knife.

Pour Chicken Stock and Onions

Secondly, add green onions to the eggs. Then pour a cup of chicken stock into it.

Whisk Eggs

Then after adding chopped onions, and stock whisk them all together using a hand whisk or a fork. Also, add a half teaspoon of salt to the beaten eggs. The egg mixture is ready for Korean steamed eggs.

Cook on Stove

Then put the pot on the stove and partially cook the eggs on medium flame while scraping the edges and bottom. Then after 2 minutes reduce the heat to low and cover the pot with a dome-shaped bowl. Let them steam cook for 5-7 minutes.

Remove Lid and Serve

Finally, turn off the flame and remove the lid from the pot. Then drizzle sesame oil over the steamed eggs before serving.

  • For a more fluffy and bouncy shape of steamed eggs, while preparing the mixture increase the number of eggs and lower the quantity of stock.
  • You can prepare it in the microwave, just put the mixture in a microwave-safe bowl and cook in the microwave for 2-4 minutes.
  • There is a third method that can be really helpful in making the recipe for beginners, just put a pot with water over medium heat and then put the egg mixture bowl in that pot. Make sure the bowl is wrapped with a towel. Then cook it for 8-9 minutes.
